Closets & Benches and unfinished projects

Image
Have you ever started a project, get into it, love what you think the vision, your end result will be?   And then just lose steam?  I have.  All.  The.  Stinking.  Time!   It's my biggest pet peeve that I have with myself.  It's of the reasons I started the blog, was to be accountable for my unfinished projects.  And yet, I still haven't finished a projected that I started. . . over. . .a . . . year . . . ago.  Yes.  It's terrible.  I know.  Maybe that's the way it with everyone, but it certainly isn't the way I want it to be with me.  New Year, New Changes, New Me. So let me tell you about this project.  It all started when I started to redo Bubba's room, which you can check out here , and I was thinking about how I was going to redo our hallway.  We have poor lighting in this hallway.  I want to redo the paint color, but also wanted something more.  Something brighter.  Some...

Slow Cooker: Lazy Day Beef Stew

Image
Slow Cooker: Lazy Day Beef Stew This week is exceptionally busy for us, so I needed more crock pot meals than ever.  I do love my crock pot... a lot.  However, I am always looking for some new and fun recipes to use in it.  I found this recipe here and what I loved most about it, was that it actually called for you to make TWO meals!   I am a HUGE fan of freezer meals.  So, of course, one is in the pot cooking away right now, and the other is already in the freezer and ready to go for the next time.  I did add a few things to this recipe as well. It is so simple to just chop up your veggies and make an extra meal at the same time and save it in the freezer.  I will be doing this from now on with my all crock pot meals, just double up, so that I always have some on stand by for those days that I have nothing planned.  4 lb Cubed Stewing Beef 4 cups Baby Red Potatoes 10 oz package Dried Lima Beans 4 tsp q...

Mean Plan Monday, on Tuesday 2/4/2013

Sorry for the delay in the Meal Plan Monday.  Remember last week, how I said I wanted things to slow down?  Well, they haven't.  Not yet at least.  Until then, until we can catch our breath, here is what we are having for dinner this week.  We didn't have every single meal, as intended last week.  Things. Just. Happened.  I have no real reason, but things just didn't work out for the menu.  So, you will notice that a few of those are overlapping into our menu this week. Monday: Chicken Pad Thai Tuesday:   Leftovers Wednesday:  Crock Pot :  Lazy Day Beef Stew Thursday:  Crock Pot:  Chicken Fajitas Friday:  Country Fried Steak w/ Green beans and Green Salad Saturday:  Pizza Sunday:  Smoked Ribs on the Green Egg w/ Chick Pea & Tomato Basil Salad Happy Eating!

Unplugged...

There have been a few things on my mind lately.  Which is partly why I've been absent for a few days.  I'm trying to wrap my mind around it and figuring out how things can run and work, smoothly for my family, while having all the extras going on in our lives.  I feel like there is a lot of pressure from society and have caused a lot of us to be plugged in, over committed, over extended, and overly exhausted all the time.  I , happen to be over exhausted because I know I am over extended.  I took this weekend to chill.  To be with my family.  To play with my kids.  To have movie marathons even on a sunny day, and to not feel bad about it.  To not feel bad about not doing a project or to not feel bad about leaving the chores unattended.   To not feel bad that my house is not ready for a magazine shoot and probably never will be. I hate that we are in a society of constantly being plugged in.   The p...

Slow Cooker: Chicken Burritos

SLOW COOKER: CHICKEN BURRITOS     We had this meal tonight, and I have to say, it was a hit.  Before, I knew it was going to be such a hit, I had missed any photo opportunities for you.  Sorry, I will get one next time and post it for you.    All the kids were loving it, and most of them had seconds on their dinners.  Which doesn't always happen.  Because the Mister and I are changing the way we eat and are trying to get into better shape, we altered the way it was served for us versus the way the kids ate it.  We had ours as a salad and the kids had whole wheat burritos.   Ingredients:   3-4 boneless skinless chicken breasts, trim off fat 1 (8oz) can tomato sauce 1/2 C salsa 3-4 T taco seasoning (or one package)  Ours is low sodium 1 t. chili powder 1 t. cumin 2 cloves minced garlic     Place the chicken in your slow cooker.  Pour the remaining ingredients over the t...
